Raw Caramel Dip

Raw Caramel Dip

Life is busy with a new puppy, but only two weeks after adopting I can’t imagine life without Ember.  She’s cuddly, playful and so smart!  She is half lab, so she’s wild at times and loves to chew, but there is already a lot of energy in this house, so she fits right in.  My parents told me about a labrador adoption / rescue group several months ago, so I […]

Black Bean Hummus

Black Bean Hummus

This is almost always part of my Sunday night prep.  I use hummus to dip veggies in and as a spread on wraps, and my girls love to dip pretzels, carrots and crackers into hummus.  It only takes a couple minutes to make and will keep fresh in the refrigerator all week. When I’m making hummus, I start with 2 – 15 oz cans of black beans, or one large 29 oz can. I use black beans in place of the more traditional garbanzo beans to make hummus since I use black beans in so many other recipes.  There are roughly 3 cups of black beans in the 30 oz of beans, but I only use 2 cups of them in this hummus recipe.  Then I reserve the extra cup to use for another meal.  I will use them in quesadillas or salads, so it’s nice to have some drained, rinsed, and ready to go for that next meal. When you drain the black beans, reserve the liquid from […]

Avocado Black Bean Corn Salsa

Avocado Black Bean Corn Salsa via Green Plate Rule

Football season means lots of get togethers with heaps of food, more often than not, loaded with cheese, meat, and processed products.  I’ve been mostly dairy-free and vegetarian for almost four years now, so I’m usually out of luck at a tailgate unless I bring my own food.  Most of the time I make my guacamole, but this week I want something just a little different.  It is the same flavors, […]

Vic’s Guacamole

VIC'S GUACAMOLE

Guacamole is one of my favorite things to eat, especially when friends are coming over.  It’s so easy to make and everyone will taste the difference when you make it fresh.  In my guacamole every ingredient is fresh, including the garlic, lime juice, cilantro, and jalapeño. First I cut up the avocado into 1/2″ – 1″cubes and place them into a medium bowl, do not mash the avocados.  Then I […]

Cookie Dough Dip

COOKIE DOUGH DIP

I don’t know who came up with this recipe originally because I have seen several versions all over the web but who ever did is genius.  Cookie Dough Dip, and guess what the first ingredient is?  Ok, you’ll never guess…beans! I always keep lots of canned beans at the house.  They are great for making hummus, adding to soups, on quesadillas, and now cookie dough dip!  This treat would be […]
