Apple Nachos & Enjoy Life Seed and Fruit Review

Apple Nachos via Green Plate Rule

Enjoy Life Foods never lets me down.  Some people think gluten-free, dairy-free, nut-free, completely allergen-free, sounds a bit boring…but ELF is bringing LIFE to allergen-free!  Once again, I have a new product we all loved, and I can use in so many ways.  The Seed and Fruit Mixes are crunchy, sweet and the perfect addition to school lunches and great for snacking on-the-go.  No nuts, only seeds, so no need to worry […]

Black Bean Hummus

Black Bean Hummus

This is almost always part of my Sunday night prep.  I use hummus to dip veggies in and as a spread on wraps, and my girls love to dip pretzels, carrots and crackers into hummus.  It only takes a couple minutes to make and will keep fresh in the refrigerator all week. When I’m making hummus, I start with 2 – 15 oz cans of black beans, or one large 29 oz can. I use black beans in place of the more traditional garbanzo beans to make hummus since I use black beans in so many other recipes.  There are roughly 3 cups of black beans in the 30 oz of beans, but I only use 2 cups of them in this hummus recipe.  Then I reserve the extra cup to use for another meal.  I will use them in quesadillas or salads, so it’s nice to have some drained, rinsed, and ready to go for that next meal. When you drain the black beans, reserve the liquid from […]

Avocado Black Bean Corn Salsa

Avocado Black Bean Corn Salsa via Green Plate Rule

Football season means lots of get togethers with heaps of food, more often than not, loaded with cheese, meat, and processed products.  I’ve been mostly dairy-free and vegetarian for almost four years now, so I’m usually out of luck at a tailgate unless I bring my own food.  Most of the time I make my guacamole, but this week I want something just a little different.  It is the same flavors, […]

Strawberry Goat Cheese Toast

Strawberry Goat Cheese Toast

I made this a few weeks ago for a charity event I was hosting.  I needed something quick to make, and could easily feed a lot of friends who were coming over to support the cause.  One of my favorite things to have is Amy’s Blackberry Vinaigrette, but I needed a way to turn it into finger food so people didn’t have to walk around eating salad. I bought some […]

Vic’s Guacamole

VIC'S GUACAMOLE

Guacamole is one of my favorite things to eat, especially when friends are coming over.  It’s so easy to make and everyone will taste the difference when you make it fresh.  In my guacamole every ingredient is fresh, including the garlic, lime juice, cilantro, and jalapeño. First I cut up the avocado into 1/2″ – 1″cubes and place them into a medium bowl, do not mash the avocados.  Then I […]
