
When berries are in season we go through them quick in my house, so we are constantly looking for new ways to enjoy them. A couple nights ago, on one of those “I’m really not in the mood to cook” nights, I made yogurt parfaits for dinner. Layers of oatmeal, yogurt, almonds, and fruit with chia seeds and Barlean’s Omega Swirl. It was a simple dinner that everyone loved. Now we have something similar in a snack form!
Chocolate covered strawberries are a favorite for many, but they are messy and don’t have a lot of good nutrition. Some of the cafe and store bought chocolate covered strawberries have partially hydrogenated oils, and lots of sugar and fat. These strawberries are filled with yogurt, chopped almonds, and chia seeds. No added sugar or oils, just lots of good stuff!
First, you’ll want to clean and hull the strawberries. Make sure you make enough room inside the strawberry for the filling. I mixed 4 oz of chocolate yogurt (you could use greek yogurt or a dairy-free yogurt), with 1 tsp of chis seeds, 1 tbsp of almonds (about 6 almonds) that were chopped. I added the mixture to a ziplock bag, cut off a corner, and used that to fill the strawberries. Feel free to add chocolate shavings, top with additional almonds, Barlean’s Omega Swirl, or whatever sounds good to you at the time! I reused an egg carton to store the strawberries so the filling wouldn’t spill out of them. Easy to store and transport, and easy to reach in and grab one! :)

There is only 2.5 grams of sugar and 1 gram of fat per filled strawberry compared to a chocolate covered strawberry with 10 grams of sugar and 7 grams of fat (information from allrecipes.com). These will stay good in the refrigerator for three days.

Think these would work well as a frozen treat?
Hi Angela, I had full intentions of trying to freeze them but they disappeared quick! They should do great in the freezer though, you may have to let them sit for a minute before eating. Let me know if that works for you! Have a great day.
