Veggie Sandwich with Avocado Spread

Ever since my trip to San Francisco, I can’t get enough veggie sandwiches.  Remember this beauty I photographed when I was there?

That baby was piled high with so many fresh vegetables, and a layer of hummus and cheese…it was AMAZING!!  Although, eating it was a chore.  It was enormous, and with every bite something was falling out the side or back.  I certainly wasn’t complaining, since I was starving at the time, but I’d rather not look like I was attacking my food while eating, or my food attacking me.  ;)

The messiest and slipperiest little sucker in this sandwich seemed to be the avocado….one of my favorite parts!  I definitely didn’t want any of it slipping away!  So at home, I decided to make a simple avocado spread.  It only takes a couple ingredients, and a few minutes to make.  I can throw this sandwich together in 10 minutes, which makes this the perfect lunch or dinner during this busy season!

The avocado spread can be made to suit your taste, and can be made in advance, but it will only stay fresh for about two days.  I start with one avocado, juice of half a lemon, 1/2 tsp finely chopped garlic and jalapeno, and about 1/4 tsp salt and pepper.  I will add cilantro, or basil if I have some on hand, too.  That makes enough for two or three sandwiches.

I like to spread the avocado on the bottom of the sandwich, and then start to layer the veggies.  Since tomatoes can also be a little messy and slippery in there, I put them on the bottom.  I used roma tomatoes, but any kind will do.

Then, I added cucumber….

And then, a little bell pepper, onion and sprouts…

Now, top it off with any extras you might enjoy, I love a little dash of red wine vinegar and extra pepper, and another slice of bread.  The sandwich with an apple is perfect for a quick lunch, or with a bowl of soup for dinner.

My girls love avocado spread on a sandwich with tomato and cheese, but I make sure to leave out the jalapeno or garlic.  It ends up being the perfect size sandwich for them.  If your little ones are apprehensive about the avocado spread, you could always add a little mayo.

This will be the perfect meal to help keep you full of energy while running around in the holiday craziness, and the colors match the season well, too!!  :)

Ingredients
  • 1 ripe avocado, pitted and peel removed
  • 1 – 2 tbsp lemon juice (about 1/2 lemon)
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • OPTIONAL ADD INS:
  • 1/2 tsp jalapeno
  • 1/2 tsp minced garlic
  • 1 tsp herbs — cilantro, basil, or parsley
Instructions
  1. Mash everything together until it’s mixed well.
  2. Spread on a slice of bread, then pile on sliced veggies of your choice.
  3. Sprinkle a little vinegar and any additional salt and pepper.

You could put all your veggies in a pita pocket and not have to worry about the slippery veggies. :)

This looks a lot like a sandwich I love from a local bakery. They add a balsamic reduction to it and it gives it that tartness that the red wine vinegar would but in a more mellow way. I love them!

Thanks for the yummy sandwich! I made it in a whole-wheat pita from Trader Joe’s and it held up perfectly! The hummus and avocado spread really made it a lot better than a regular veggie sandwich!
