Yesterday, after getting frustrated working on the computer, I shut it down and decided to make a juice. I had full intentions of making a juice with oranges and grapefruit but I realized I had tons of vegetables on hand that needed to be used. After two years of making homemade juice, I finally have a vegetable juice I want to make again. Often I find myself drinking them just so I don’t have to waste it but this time I finished it and wanted more! Don’t let the list of ingredients scare you. It’s actually quit mild in flavor compared to what you might think.

I just started cleaning out my refrigerator and this is what I ended up with. If only I had thrown in a couple blueberries so I could have all the colors of the rainbow! One of my favorite things about owning a juicer is we hardly ever let things go to waste. I’ve probably saved enough in produce to make up for the cost of my Omega J8006 juicer!
| Vegetable Juice |
- 1 large handful of parsley
- 1 red bell pepper, cored
- 1 yellow bell pepper, cored
- 1 cucumber
- 3 tomatoes
- 6 carrots
- 4 stalks of celery
- 2 stalks of kale
- 2 cups of spinach
- 1 garlic clove
- 1/4 red onion
- 1 beet
- Clean all the ingredients and chop is necessary to fit into juicer
- Juice everything
- Pour over ice and enjoy!

Hi Victoria: How long will this juice last? If I make in on a Sunday, will it last for a few days? Since juicing can be a big production, I would like to make a batch on Sunday and have it for the week.

Hi Laura,
I usually do not keep juices more than 24 hours, but most say juices will stay fresh for up to 48 hours. I think if you plan to keep it for more than a day, I would add some lemon or lime. It just seems to help keep it fresher tasting when those are added.
