Strawberry Goat Cheese Toast

I made this a few weeks ago for a charity event I was hosting.  I needed something quick to make, and could easily feed a lot of friends who were coming over to support the cause.  One of my favorite things to have is Amy’s Blackberry Vinaigrette, but I needed a way to turn it into finger food so people didn’t have to walk around eating salad.

I bought some organic whole wheat mini toast from Whole Foods.  These are great for appetizers since they are bite sized, come 36 to a pack for just a few dollars, and only have a few organic ingredients.  It’s easier than buying a baguette and toasting it myself, and saves me a lot of time.  You could always use crackers as well, especially if you need a gluten-free option, but be sure to read the labels.  Watch out for partially hydrogenated oils and high fructose corn syrup.  I spread some goat cheese over the mini toast, added a slice of strawberry, and poured some of the blackberry vinaigrette overtop.  It was a huge hit at the party!  This would be a great appetizer to serve when you have family and friends over, perfect plate for a 4th of July gathering, or great for an afternoon snack!  It takes just minutes to prepare, especially if you make the salad dressing ahead of time.

A friend of mine used this quote on a fundraising page last year.  It sums up charity work perfectly.  I may not be able to find a cure for every disease, help all the wounded and disabled, save all abused woman and children, rescue every pet, or provide a roof, food, and water for every person out there, but every little bit I can do is making a difference.  If we all donated a few hours a year, or a couple dollars here and there, think of what that would add up to.
