
With the 4th of July celebration just around the corner, I was thinking of new ideas for a red, white, and blue treat. We’re lucky to have right strawberries and blueberries in season during this holiday, they make it easy to come up with new tasty ideas. Ice cream is one of my favorite indulgences, especially when it’s hot out, and So Delicious Coconut Milk Vanilla Bean Ice Cream is one of our favorites! It’s organic, dairy free, and delicious. :)
Let two pints of ice cream sit out at room temperature until softened. That will take about 30 minutes to an hour. Then spread it into a 8 x 11 freezer safe baking dish so it’s about an inch thick, cover, and put it back into the freezer until frozen solid, about 1 hour. If you are serving this for a party you can do this part the night before. Just before serving take it out of the freezer, it’ll soften pretty fast.

Using cookie cutters, cut out stars and place them in a bowl with blueberries and strawberries that have been cleaned. Kids will love getting involved in this part! I let my girl’s help me with the stars and I explained the American flag has 50 stars, one for each state. My four year old looked up with bright eyes and a big smile and said, “so does that mean we get 50 stars?” Smart little girl. :) Not sure we could get 50 stars, but you should be able to cut out 12 – 15 shapes, we served 2 stars per person. If you’re looking for something to help with portion control, these cookie cutters do the trick. Two small stars over fresh berries is enough to get you a taste of ice cream without going over board.
And once the ice cream starts to melt over the berries, you get fresh berries covered in vanilla and coconut flavored ice cream. I’m ready to dive in now!!

This will definitely be a regular treat around our house!
