A friend from college sent me this recipe a few weeks ago. It’s an easy recipe, and would be a great treat on Easter weekend. You will not find store bought candy in my girls’ Easter basket. Why do we feel it’s necessary to stuff our kids with chocolate bunnies, and artificially dyed candy for Easter? Here kids, have some chemicals, and a sugar high. Um, no thanks! Instead, we had fun making an Easter egg treat together! So many more memories that way! Then in their Easter baskets they will get some beach toys and accessories since we are heading to the beach!

- 1 cup unsweetened coconut flakes
- 3 tbsp honey – I use raw honey
- 1/2 tsp peppermint extract
- 1 cup of chocolate chips
I used a handheld electric mixer, Stephanie said she likes to use her blender, to mix the coconut flakes, honey, and peppermint extract together. The girls took turns helping!
My tbsp measurer is shaped like an egg, so I used that to form the egg shape.
I sat them on parchment paper and placed in the freezer while I melted the chocolate. Then over a double boiler I melted the chocolate over medium heat. I removed the eggs from the freezer. Time to coat them in chocolate!!
I found it was easiest when I held one of the eggs and used a spatula to cover them in chocolate, or you can pour the chocolate over the eggs. Then I placed them in the refrigerator to cool completely. They should be kept refrigerated until you are going to serve them.
This made 10 tbsp sized eggs.
