Pea Salad with Creamy Avocado Lemon Basil Dressing

Summer is full of get togethers with friends, family, and neighbors, so it’s important to have a bunch of quick and healthy meals around for those last minute gatherings.  This salad has all my favorite summer flavors mixed together with peas.  The creamy avocado dressing screams summer with bright and refreshing flavors from the lemon and basil.  And the best part of this recipe, no cooking required!  Just defrost the peas, make the dressing in the food processor, mix it all together, and you’re done.  Now, that’s my kinda dish — healthy, quick, and easy.  :)

This salad is healthy, and easy to throw together for those summertime get togethers. It has all the flavors of summer and full of nutrition.
Ingredients
  • 1 16oz bag of frozen peas, completely defrosted
  • 1/2 cup chopped red onion
  • 1 Haas Avocado
  • 1 garlic clove
  • 2 tbsp plain yogurt (greek or non-dairy)
  • 2 tbsp water
  • juice and zest of half a lemon
  • 1 tbsp fresh basil leaves, plus more to top salad
  • 1/2 tsp salt
Instructions
  1. Add the peas and the chopped red onion to a medium bowl
  2. Add the remaining ingredients to a food processor and mix until smooth
  3. Pour the dressing over the peas and gently mix
  4. Add salt and pepper to taste
  5. Top with some fresh basil
  6. Serve cold

So happy to have stumbled onto your blog! Would coconut plain yogurt be the best option for non-dairy?

I’m glad you stumbled upon the blog as well! :) Coconut or Almond yogurt would work great. The only problem with coconut yogurt is most of them have carrageenan added as a thickener. I know the Amande Almond Yogurt does not have carrageenan added. Have a great day, Katey!
