Every kid, adults too, needs a little treat from time to time, but it’s next to impossible to find something without excess amounts of sugar and artificial ingredients at a store or restaurant, and if you want gluten-free and dairy-free on top of that, you can almost forget about it! I was so impressed with the flavor but the real AHHH moment came when I looked at the nutritional value on the box. You mean to tell me these cookies (about 3″ in diameter) have only 4.5 grams of sugar a piece? Huh? Must be a typo because they don’t taste like they are missing anything, and I don’t think any cookie I’ve made has only 4 grams of sugar. :) I have been watching our sugar intake like a hawk in this house, so I was happy to see a company mindful of the amount of sugar in their product.

Looking to make a no-bake pie crust in just a couple steps? Grab a box of Enjoy Life Foods Crunchy Chocolate Chip Cookies, crumble all the cookies into a food processor. Then add 1/4 cup of melted coconut butter (or other non-dairy butter), and 2 tbsp of chia seeds. Pulse until it’s completely mixed.
Press down into a pie crust, or I pressed it down into mini muffin tins. I have no off switch when it comes to sweets so I’m better off making tiny serving. :) Then put it in freezer until it sets, about 10 minutes. I topped it with Banana Soft Serve (just a couple frozen bananas and 1/2 tsp of vanilla extract in the food processor until it forms a soft serve consistency). You could also top with your favorite ice cream, or any other n0-bake pie filling!
