
Wow! I am overwhelmed by the response from those who have watched Fat, Sick & Nearly Dead as part of the January Challenge for a Change. I have heard from several of you who are going to do your own reboot. If I remember correctly I said something along the lines of watching the movie is a not a challenge but what the movie will inspire you to do will be. Chef Amy was over this morning and we decided to add a few more juice recipes for everyone looking. We came up with three very beautiful and tasty juices. Hope you enjoy !

Great Green Juice
- 2 celery stalks
- 1/2 cucumber
- 3 kale leaves
- 1 lime, remove peel before juicing
- 1/2 cup pineapple
Juice all the ingredients and serve over ice.
Sweet Beet Juice
- 1 beet
- 2 apples – pink lady, or honey crisp
- 1 sweet potato
Juice all the ingredients and serve over ice.
Carrot Cake Juice
- 3/4 cup carrot juice
- 1/4 cup pineapple, juiced
- 1/4 coconut milk
- 2 dates, pitted
- 1/4 vanilla extract
- 1/8 tsp cinnamon
- nutmeg, and clove to taste
- ice
First I juiced the carrot and pineapple. I added those juices to my vitamix blender and added in the rest of the ingredients. Blend on high until smooth. Start with just a little of the spices, a little goes a long way. Then add more as needed.
