Up until last year, I had never bought figs. I thought they were beautiful and knew I liked them, but had no clue where to start if I bought them. It’s funny how many intimidating things are at the store but are really so simple to use – figs included! All it takes it a small drizzle of honey, a quick roast and you have a beautiful and sweet honey roasted figs that are tasty on its own, an impressive addition to a cheese platter, or in this case a yogurt parfait.
The weather has been picture perfect so we’ve spent many afternoons outside. Almost all of our meals have been on the back patio or a picnic at the park. For the latest mid afternoon picnic at the park, I made these yogurt parfaits to bring along. DELISH…
I took 2 cups of plain greek yogurt, and added 1/2 tsp vanilla extract and 1 tbsp of honey to add a little extra sweetness. Then divided the yogurt evenly into the bottom of four 8 oz mason jars. Since I was making these the night before, I placed a small square of parchment paper over the mason jar to help separate the figs and yogurt. When I roasted the figs they were in halves, but I cut them in half again so the pieces would be smaller and easier to eat. I added 8 fig quarters, 2 whole figs total, to each parfait, then added a few pistachios for a little crunch. To my surprise, both of my girls loved the figs, and the yogurt parfaits were a hit with everyone!
These make ahead parfaits would be perfect to make Sunday night and use throughout the week. You could add fruit, granola, nuts and seeds in any combination you prefer. Then pack them for work or school lunch, breakfast on the go, or for your kids to have as an after school snack.
Oh, how I love easy make ahead meals full of flavor and nutrition.

- 1 pint of fresh figs, stems removed and cut in half
- 3 tbsp honey
- 2 cups of plain greek yogurt
- 1/2 tsp vanilla extract
- Sweetener – 1 tbsp honey or 4 drops of liquid stevia
- 1/4 cup pistachios
- Preheat the oven to 375
- Place figs on a baking sheet, cut side up, and drizzle with honey
- Roast 15 minutes, then remove from the oven and let them cool
- I cut them in half again once they cooled, before adding to the parfait
- Mix yogurt with vanilla extract and sweetener and divide evenly between 4 small mason jars
- Place a small square of parchment paper on top, and push it down just enough to add figs and pistachios in the mason jar.
- Add 2 figs (8 quarters) and 1 tbsp of pistachios to the top
- Seal mason jar and store in refrigerator up to 5 days.
You will have some figs leftover. You could either add more figs to each parfait, use them with cheese and crackers, or I used the leftovers in a smoothie…you’ll get that recipe tomorrow.

Yum!! I love yogurt with granola and honey. I never thought to add a dash of vanilla! Such a good iea. And same as you, I’ve alwasy been intimidated by figs. But after reading your post, I think I’m going to try to pick some up when I get back from the DC Green Expo!

Hi! This is probably a silly question but where can I get mason jar? I’d love to make these!
This time of year you should be able to find them in most super stores and grocery stores. I can usually find them at Wal-Mart or Whole Foods if I need them quickly. You can also find them online at Amazon.com. I used wide mouth mason jars for the parfaits.

Sure! You could use the same idea with almost any fruit, nut or granola. Enjoy!
