I know cherries are not in season but this smoothie is so good I could not resist.  I used frozen cherries and you should be able to find those year round.  This smoothie is so sweet even though bananas and cherries are the only thing adding sugar to the drink!  And if you are looking to add fiber to you diet, or your child’s diet, this smoothie might be a great option at breakfast or for an afternoon snack.  It gets 3 grams of fiber from the banana, 3 g from the cherries, 2 g from the walnuts, and the chia seeds add 2 g of fiber!  Total for the whole thing is 10 grams, or 5 grams per serving.  Cherries are also very low in calories, only 87 calories per cup, and full of antioxidants.  Walnuts are a great source of omega-3′s and protein.  Lots of goodness in one cup!

This cherry walnut smoothie is full of nutrition and sweetness.  The beautiful color doesn’t hurt either!

Ingredients
  • 1 cup unsweetened coconut milk
  • 1 cup frozen pitted dark cherries
  • 1 banana
  • 1/4 cup walnuts
  • 1 tsp vanilla extract
  • 1 tbsp chia seeds (optional)
Instructions
  1. Place all the ingredients into a blender.
  2. Start on a low speed gradually raising to high.
  3. Blend until smooth, about 1 minute.

I don’t like bananas which means I don’t use a lot of smoothie recipes I’d like to. Any suggestions for a substitute? Applesauce?

Hi Danielle, I’m not sure how applesauce would work. The bananas are more for texture than taste. You could sub with 1/2 of an avocado, or try 1/2 cup milk and 1/2 cup yogurt. If none of those sounds like they would work you could soak 1/2 cup of rolled oats in the coconut milk for 30 minutes, then add all the other ingredients and blend. Hope that helps you!!

I substituted greek yogurt and a little agave syrup for the banana today (I ran out of bananas) and it worked beautifully. By far one of my favorites!
