This has been my favorite smoothie all week.  It gets its sweet flavor from the blueberries, yogurt, and dates, but just a little touch of spice from the ginger.  Trust me, even if you are not a fan of ginger, you will like this smoothie!  I can’t say I came up with this combination on my own.  One of my favorite treats is going for coffee and doughnuts at a doughnut shop close to my home. They make their dough, toppings, and fillings from scratch everyday.  All real ingredients, no preservatives, and the most amazing flavor combinations.  Blueberry Lemon Ginger is one of the flavors from time to time.  And since that particular flavor is not offered all the time, nor should I be eating a doughnut everyday – sigh, I figured I would come up with a smoothie to match!

This smoothie has lots of blueberries.  Blueberries might be small but they are full of antioxidants.  They are one of the highest providers of antioxidants per serving of any fruit, vegetable, or spice.  They have shown in studies to help keep your memory sharp, and they have a low glycemic index.  This tasty fruit has only 80 calories per cup, is high in vitamins C and K, manganese, and fiber.  All around blueberries are a powerful and tasty fruit!  If you can ever find blueberries on sale while they are in season, stock up and freeze what you do not use so you always have some on hand.

For all of you who are not so sure about ginger, maybe this could change your mind.  Ginger contains high amounts of antioxidants.  It is an anti-inflammatory and antiviral spice that is great for boosting circulation and lowering high blood pressure.   And studies show ginger can kill ovarian cancer cells.  I could continue talking about how it’s good for nausea, helps with colds and flu symptoms, and more but I think you get the point. :)

Recipe: Smoothie

Serves: 2
Ingredients
  • 1 cup unsweetened coconut or almond milk
  • 1/2 vanilla yogurt (greek yogurt, or coconut yogurt for vegan)
  • 1 cup blueberries, fresh or frozen
  • 1 frozen banana
  • 2 pitted dates
  • 1 tbsp fresh lemon juice
  • 1 tsp fresh ginger
  • 1 tbsp chia seeds
Instructions
  1. Place all the ingredients into a blender
  2. If you are using fresh fruit instead of frozen you will want to add a couple ice cubes
  3. Start on a low speed and increasing to high
  4. Blend until smooth, about 1 minute
Notes

I just made this for the 5th time this week and added 1/2 cup of spinach. Yummy!
