Apple Muffins with Walnut Streusel

It’s about to get a little crazy around my house.  Good friends are coming from out of town with their kids for a few days so we will have four kids between two and four under one roof.  Thank goodness for some crafty ideas I found on Pinterest to keep them busy and some quick and healthy made ahead meals.  Muffins are easy to make in large quantities and freeze to use for meals or snacks.  This muffin has quinoa flour and flax meal giving it lots of protein and fiber.  Mini muffin pans make muffins the perfect size for little fingers!

Give this one a try you and your kids will enjoy it.

Ingredients
  • 1 ½ c. Whole Wheat Pastry flour
  • 1/2 c. Quinoa Flour
  • 3/4 c. Flaxseed meal
  • 3/4 c. brown sugar
  • 1 t. baking powder
  • 1 t. baking soda
  • 1/4 t. salt
  • 1/2 c. milk, lowfat, 1%
  • 1/2 c. orange juice
  • 1 T. butter, unsalted
  • 1 t. vanilla
  • 2 eggs, large
  • 2 c. Granny Smith apple, chopped
  • 1/2 c. raisins, golden
  • 1/4 c. walnuts, chopped
  • 1/4 c. whole wheat pastry flour
  • 1/4 c. quick cooking oats
  • 1/4 c. brown sugar
  • 1/2 t. cinnamon
  • 3 T. butter, chilled
Instructions
  1. Preheat oven to 350°.
  2. To prepare muffins, lightly spoon flours into dry measuring cups; level with a knife.
  3. Combine flours, flaxseed, and next 4 ingredients (through salt) in a medium bowl, stirring with a whisk. Make a well in center of mixture.
  4. Combine milk, orange juice, melted butter, vanilla, and eggs, stirring with a whisk
  5. Add to flour mixture, stirring just until moist.
  6. Fold in apple and raisins.
  7. Spoon batter into muffin pan coated with cooking spray or use paper cups.
  8. To prepare streusel, combine walnuts, flour, oats, cinnamon, brown sugar, and chilled butter in a small bowl, stirring with a fork until crumbly or use your fingers to mix together.
  9. Sprinkle streusel evenly over batter.
  10. Bake at 350° for 20 minutes or until muffins spring back when touched lightly in center.
  11. Remove from pans immediately; place on a wire rack.
  12. Serve warm or at room temperature.

Hi Victoria,

Hope all is well! I continue to love this site, and the recipes.
With the apple muffins, are they healthy enough to have for breakfast? My 13 year old and I are getting tired of hard boiled eggs and oatmeal would love to try something new.
Also, how long can I freeze them? and how do I freeze them in zip lock bags, or containers?
