Apple Cinnamon Chia Pudding

  1. In a bowl combine milk, chia seeds, cinnamon, and nutmeg.
  2. Mix well and let it sit in refrigerator. After the chia seeds have been in the refrigerator for 30 minutes, take them out and stir to break up any clumps that have formed, then put it back in the refrigerator.
  3. Leave in there for at least 3 hours, or overnight, so the chia seeds can absorb the milk.
  4. Then just before serving:
  5. In a medium pan melt the butter over medium heat.
  6. Add the apples and cook, continuing to stir, until the apples are tender, about 5 minutes.
  7. Dissolve the cornstarch in water and then add to the pan.
  8. Add the cinnamon and agave and continue to cook for one minute, stirring occasionally.
  9. Remove from the heat and let it cool for a couple minutes.
  10. Add the sauteed apples over the chia pudding and top with walnuts.
