I was using up some produce Thursday when I made this smoothie. The flavor and color got me so excited for fall, which is always my favorite time of the year!! I love the cool mornings, the colors of the leaves, the fall festivals, decorating for the Holidays…everything about it is perfect. My youngest helped me make the smoothie while her sister was at school. This one takes a little extra work since the sweet potato needs to cook first. You could bake it, boil it, or if pressed for time you could use canned sweet potato. If you have leftovers on hand, this is the perfect way to use them, and it would save you some time.
I’m so glad she loves smoothies just as much as her mama. :)

I bought spray bottles for each girl to help water the herbs. It’s been a great way to keep them entertained while I cook dinner or clean up. After our smoothie break, she went right to work making sure the plants were watered. When it’s the two girls together, the plants get about 4 sprays before they start to spray each other. Sisters. :)

| Apple and Sweets Smoothie |
- 1 cup unsweetened non-dairy milk
- 3/4 cup cooked and cooled sweet potato
- 1 apple, cored and chopped
- 1 small frozen banana
- 1 tbsp chia seeds
- 1 tsp sweetener, preferably honey or maple syrup
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/8 tsp fresh ginger
- 1/8 tsp nutmeg
- 4 ice cubes
- Add all the ingredients to a blender
- Start on low speed, slowly increasing to high
- Blend until smooth, about 1 minute
